An innovative concept in Abbeville with the IT Italian Trattoria restaurant

Abbeville and Abbevillois (Somme) have a new catering brand. Since Thursday, April 21, IT Italian Trattoria has opened its doors in place of the former Les Bons Pains bakery owned by Monsieur Fauquembergue in the Vauchelles business park.

Italy on the plates therefore with Italian gastronomy but also in the welcome, on the walls with a transalpine atmosphere as exotic as it is tasty. At the head of the restaurant, Gaël Cavallaro who knows the brand perfectly to be the first franchisee.

“IT was created in 2014 and we have 43 brands in France. I already have a restaurant in Lille and I will soon be taking over a business in Amiens” specifies the Abbevillois manager.

Based on an innovative concept that may surprise customers accustomed to ordering at the table, Italian Trattoria does not offer room service, as Gaël Cavallaro explains: “when we welcome the customer, he is invited to order the dish of his choice (pizza, pasta, salad, etc.), a drink or a dessert and they are given a beeper. The customer then sits down at a table and can pick up their dish from the open kitchen when the beeper rings. »

The vast majority of raw materials are imported from Italy, including the tomato sauce which comes from the Naples region for the pizzas and from Sicily for the pasta.

Another particularity of the brand as indicated by the manager, “the vast majority of raw materials are imported from Italy, including the tomato sauce which comes from the Naples region for the pizzas and from Sicily for the pasta. We don’t have a freezer, we only work with fresh produce, making everything on site, the pizza dough, the desserts, the salads…” A meal that ends with a real Italian espresso prepared under pressure in a Italian coffee… machine.

24 people recruited

And who says openness, says job creation. “To operate the brand, we recruited 24 people, which corresponds to about twenty full-time equivalent positions. We went through Pôle Emploi, which made it possible to recruit 90% of the staff,” explains Gaël Cavallaro.

The Abbeville brand has 114 seats as well as around 80 seats on the terrace with a non-stop service until 10:30 p.m.
