Looking for delicious ice cream in Paris? We go to discover Bältis, the brand new ice cream parlor on rue Saint-Antoine, a stone’s throw from Place des Vosges. Good, organic and gourmet, here’s something to treat you.
You like the ICES and in particular the good organic ice creams and original ? What if you were to find out Baltis ? The brand new ice cream parlor with Lebanese flavors. In the heart of the Marais, between Place des Vosges and Bastille, this new gourmet spot is likely to attract foodistas in search of freshness.
Exit industrial ice cream with dubious components, here we are in an artisanal workshop-boutique. All the ingredients used are organic and rigorously chosen and it is an in-house natural stabilizer that has been developed to allow the smoothest finish in the mouth.
At the origin of this shop, Jean-Michel de Tarrazi and Nadim Kettaneh, two cousins born in Lebanon, who had the ambition to offer ice creams and sorbets with Levantine flavors. Note that all ice cream is made on site in the lab hidden behind the shop.
Regarding the development of the recipes, the duo called on Jean-Thomas Schneider (World Pastry Champion 2017, Ice Cream World Champion 2018 and best ice cream worker in France 2019). It took several months for the trio to develop the right texture, reveal the Lebanese flavors by associating it with the finesse of French techniques.
Here, we are in the taste above all and the ice creams, low in sugar but rich in raw materials and in particular in fruit for the sorbets (60% fruit), explode in the mouth.
So, what do we discover for ice cream in this shop? Among the flagship perfumes, we find the essential atcha made of milk cream flavored with orange blossom and mastic pistachio tree sap, to which a root orchid was added to give it a unique texture. This is the store’s star ice cream, which comes coated in pistachios, spun cotton candy or even as a bite on a bird’s nest.
Among the other perfumes that make us travelwe obviously find the pistachioalmond, rose water sorbetthe Orange Blossom and the hAlawaa ice cream made with white sesame paste and pistachios, also known as halvah.
Obviously, we do not miss the intense chocolateof the vanilla which excels in all its flavors and sorbets such as strawberry or apricot which we loved.
The shop offers a few seats inside and a terrace outside, but you are free to stroll to the Place des Vosges or near the Parc de l’Arsenal. In any case, on site, you have the opportunity to discover a great offer of traditional house drinks. Let yourself be tempted by the traditional lebanese brewed coffee with cardamomthe anise herbal tea or the famous “white coffee” (orange blossom infusion).
For more freshness, opt for the homemade lemonade at the Orange Blossomor even rose or blackberry water, which you can choose granita for the hot weather. Note that you can also discover a selection of traditional artisanal biscuits, imported from Lebanon in a fair process. From Yensoun with aniseed flavor Pistachio Barazek and sesame through the Ghraibe like a Lebanese shortbread, these sweets accompany your drinks wonderfully.
