The lawyers that need to ripen should be stored in the refrigerator for four to seven days. Refrigerating them will prolong the process and may make them ripen longer. Like lawyers, mangoes unripe should be stored at room temperature, as cold slows ripening. They can be placed in a plastic bag and refrigerated once softened.
