the Select bar at Vaas (Sarthe) has just changed management with the arrival of a Védaquais, Roman Richardat the head of the establishment.
A cook by trade, Romain Richard worked for 5 years in various restaurants on the coast, the Loire Atlantique to the Brittanybefore returning to his home village.

In Vaas, just before the covidthe cook had joined the kitchen of the Védaquais, under the orders of Frank Lelong before leaving his post last March to fly his own wings.
“With my wife, we wanted to take on a business on our own to find a family life with our baby. “, explains the buyer.
Romain Richard’s goal? “Develop the workers’ brewery. And it’s off to a good start, I have nothing to complain about,” he said.
Local supply
The Select bar, in its new version, offers a brasserie-style menu (€13.50 starter, main course, dessert) every weekday lunchtime.
“I work in a short circuit with vegetables, apples, meat, charcuterie and bread from Vaas, potatoes from Saint-Paterne-Racan, organic and fresh products”, assures Romain Richard.
Open every day
Before opening the establishment, the managers carried out some work on the front of the bar and bought a buffet of starters and a dessert display case, for the lunch service.
Once a month, the establishment will offer a themed evening.
The Select bar is open 7 days a week from 7:30 a.m. to 7:30 p.m.
The Select Bar in Vaas is open 7 days a week, closed on Wednesday, Thursday and Sunday afternoons. Restaurant for lunch from Monday to Friday and Saturday evening by reservation on 02 43 46 74 01.
