In Nancy, Place Charles III has had a new establishment since April 14. This is the restaurant Italian Trattoriaa franchise that exclusively offers traditional Italian cuisine, led by three partners: Jean-Michel Iniesta, Sébastien Raebisch and Fabrice Militon.
If the three co-managers have had a smile on their face since the long-awaited opening of their establishment, the last two years have proved to be particularly trying for them.
And for good reason, while they were at the notary to acquire the goodwill, on March 13, 2020, they learned that the country was going to be confined due to Covid-19. Unfortunately for the trio, other obstacles were to follow.
The confinement ended, we were able to return to the restaurant with the architects in May 2020. But, a few months later, we were reconfigured. In early 2021, a company attacked the works. She should have finished them in January. Except that she had to face a judicial liquidation procedure. So we finished the work ourselves. A monster job because, each time we planted a nail, we noticed that there were problems with the structure of the building.
Finally, after a year of work, the Italian Trattoria brand was able to arrive in the Grand Est.
“Fresh, quality products and homemade dishes”
Two weeks after the opening, the trio say they are very happy and praise their fresh, quality products and their homemade dishes.
Here, we offer traditional, family and popular Italian cuisine, with noble products. As far as raw materials are concerned, we deliver once a week, and everything comes from Italy. They are then transformed every day upstairs, in our laboratory. With us, there is no freezer or microwave. We work on all our products.
The co-managers are also happy to offer homemade dishes at very affordable prices. Including the famous margherita pizza, displayed at just over 6 euros.
The fact of doing everything in house allows us to offer much lower prices. We make popular cuisine while providing people with quality catering at affordable prices.
Focus on fast food
In addition to the traditional pizzas, the restaurant offers different kinds of pasta, gnocchi, risottos, or even antipasti. Different meat dishes should be arriving soon. Without forgetting the desserts, of course.
We offer quality products while focusing on fast food. Clearly, the order is taken at the counter and people take their tray. They have a beeper that rings once their order is ready. But, when we have a little less people, we sometimes take orders at the table and do the service as well.
Open from 8 a.m. to 10:30 p.m. on weekdays and until 11 p.m. on weekends, the establishment welcomes its customers seven days a week. And, it is not compulsory to go through the starter, main course and dessert box. “We have a bar area where people can have a drink. If the customers want to eat a pizza at 4 p.m. it is possible. They can also simply come and enjoy a dessert,” explains Fabrice Militon.
