If you don’t know what to do with rhubarb, here is a gourmet recipe idea made by Laurent Mariotte: a soft cake that is very easy to concoct. In addition, you will only need a few ingredients to cook it.
Rhubarb is back on the stalls of our markets and supermarkets as well as in gardens. But we don’t always know how to cook it. To change from the traditional apple-rhubarb compote, Laurent Mariotte unveiled in the program Petits Plats enquilibr, a very simple recipe to make and in season to take advantage of this tangy ingredient: a tasty ultra soft cake. Laurent Mariotte’s rhubarb cake recipe
For 4 people
250 g blond cane sugar
100 g liquid cream
170g T55 flour
1 packet of dry yeast
60g melted butter
The preparation :
Butter and flour your cake tin.
In the bowl of your mixer, combine the ingredients for the dough except the melted butter. Mix everything then finish with the melted butter.
Pour the preparation into the mold and reserve in the freezer for one hour.
Briefly peel the rhubarb; Cut the stems into sections the width of your mould. Sprinkle with 50 g of sugar and leave to drain for an hour.
Preheat the oven to 170°C
Take the cake out, arrange the rhubarb sections straight like pegs in the mold and bake for 50 minutes. Leave to cool, unmold the cake
and polish with the degorged rhubarb juice.
