2022 continues to be a busy year for Guillaume Momboisse, 32-year-old starred chef. While he has announced the closure of the Septhis restaurant in Toulouse, on June 11 in order to reopen another at the end of the year, he will, in the meantime, be at the helm of an ephemeral establishment on the quays of the Daurade.
Make way for Origins!
In search of a new challenge, Guillaume Momboisse will therefore close his restaurant on June 11, 2022. But it will not take long to concoct tasty dishes, since from the 24th of the month, it will take place in an ephemeral restaurant. On the quays of La Daurade, the starred chef will be at the helm of Origins. “It will be with the same team as in Sept, nine people”, comments the 32-year-old man, who will work in one of the most popular sectors of Toulouse until October 31.
True to his kitchen
“We will find an identical kitchen but to share, in the idea gastronomy of friends, therefore more readable than the Michelin star, but with the same products”, comments the one who recalls that “my universe, it’s seafood“. As for Origins, the experience will only be temporary, but the ambition of Guillaume Momboisse, who is driven by a taste for challenge, will remain the same.
He explains: “there will be the same productsthe same desire to please, around good bottles of wine, with a beautiful menu that will be made by our sommelier, who will stay with us. This restaurant, located a stone’s throw from the unmissable Café des Artistes, will be the perfect transition before the new adventure, which should start at the end of 2023.
A new restaurant at the end of 2022-beginning of 2023
Guillaume Momboisse will serve his last dishes at Le Sept, on June 11, 2022. Opened in 2018, he only needed seven months to conquer the star… which he will lose by closing his establishment. But the 32-year-old chef is taking a gamble: that of opening a new enclosure, at the end of 2022-2023, still in the center of Toulouse. “It will be in the same register, with the objective of evolving, of not stopping at a Michelin star. We will try to seek a slightly more advanced culinary experience,” he said.
Already a similar experience in 2021
This will not be the first time that Guillaume Momboisse has opened an ephemeral establishment. From July 2 to August 27, 2021, it is in the south wing of the cloister of the Jacobins that the starred chef had officiated, in a gastronomic address called “Origins by Sept”.
